Oatmeal Raisin Cookies

List of Ingredients
- 1/2 C sugar
- 1/4 C light brown sugar, packed
- 1/3 C reduced-calorie margarine
- 1 large egg
- 1 tsp vanilla extract
- 1 C all-purpose flour
- 1 C uncooked old-fashioned oats
- 1/2 C raisins
Instructions
- Preheat oven to 350. Coat 2 large baking sheets with cooking spray.
- In a large mixing bowl, combine both sugars, margarine, egg and vanilla; beat with an electric mixer on medium speed until smooth and creamy. With the mixer on low speed, beat in flour and oats; fold in raisins.
- Drop mixture by scan tablespoons onto prepared baking sheets. Bake until puffed up and golden brown around the edges, about 15 to 20 minutes.
- Cool on baking sheets for 3 minutes; transfer to wire racks to cool completely.
