    These muffins are absolutely delicious. A wonderful treat for kids and adults alike.

    List of Ingredients




    1 Cup Whole Wheat Flour
    3/4 Cup Sugar
    1/2 Cup Oat Bran
    1/2 Cup All-Purpose Flour
    2 Teaspoons Baking Soda
    1/2 Teaspoon Salt
    3 Eggs
    3/4 Cup Applesauce
    1/4 Cup Vegetable Oil
    1/4 Cup Molasses
    2 Teaspoons Vanilla Extract
    1/4 Teaspoon Orange Extract
    2 Cups Grated Carrots
    1/2 Cup Raisins
    1/2 Cup Walnuts
    1/2 Cup Flaked Coconut
    1 Medium Tart Apple, Peeled And Finely Chopped

    In a bowl, combine the dry ingredients. In another bowl, combine eggs, applesauce, oil, molasses and extracts; mix well. Stir into the dry ingredients just until moistened. Fold in carrots, raisins, walnuts, coconut and apple. Fill greased or paper-lined muffin cups three-fourths full. Bake at 350 degrees for 25 to 30 minutes or until a toothpick comes out clean. Cool for 5 minutes befor removing from pans to wire racks. Yields about 1-1/2 dozen.
