    Cumin complements the corn and pepper in the fritters. You will love this great oldtime recipe.

    List of Ingredients




    1 1/4 Cups Fresh Corn
    1 Cup Finely Chopped Sweet Red Pepper
    1 Cup Finely Chopped Green Onions
    1 1/4 Cups All-Purpose Flour
    2 Teaspoons Baking Powder
    1 Teaspoon Ground Cumin
    1/4 Teaspoon Salt
    1/8 Teaspoon Pepper
    1 Cup Milk
    2 To 4 Tablespoons Vegetable Oil

    Recipe



    In a bowl, combine the corn, red pepper and onions. Combine flour, baking powder, cumin, salt and pepper; stir into corn mixture. Gradually add milk, stirring until blended. In a skillet over medium heat, heat 2 tablespoons of oil. Drop batter by 1/4 cupfuls into skillet. Cook for 2 minutes on each side or until golden brown. Repeat with remaining batter. **Adding more cumin commonly sparks compliments. Yields 13 to 14 fritters.
