    These cookies are very lite and perfect for parties or gatherings.

    List of Ingredients




    2 1/2 Cups Sifted Cake Flour
    1/2 Teaspoon Salt
    2 Teaspoons Baking Powder
    1/2 Cup Margarine
    1 Cup Granulated Sugar
    2 Eggs
    1/2 Teaspoon Vanilla
    1 1/2 Cups Fresh Coconut

    Recipe



    Sift together first three ingredients. Mix until creamy; shortening, sugar, eggs, and vanilla. Mix in flour mixture, then coconut. Chill 1 hour. Heat oven to 375 degrees. Form dough into 1 inch balls, place on greased cookie sheet 3 inches apart. Using bottom of glass covered with damp cheesecloth, flatten each ball. Bake about 12 minutes. Yields 3 dozen cookies.

    Note: Keep an eye on the cookies the first time you use this recipe. The temperature may be too high for your stove. Could take longer or shorter time to bake.
