    Filled puffs and eclaires are delicious and a great treat to serve at parties.

    List of Ingredients




    1 Cup Hot Water
    1/2 Cup Butter
    1/4 Teaspoon Salt
    1 Cup Sifted Flour
    4 Eggs

    Recipe



    Bring water, butter and salt to a boil. Turn heat down to low and add flour all at once, stirring briskly until the mixture is smooth and leaves the sides of the pan. Remove from heat and add unbeaten eggs, one at a time, beating vigorously after each addition until the mixture is smooth and glassy. Drop by tablespoonsful, 2 inches apart, on greased cookie sheets. Bake in hot oven (400 degrees) 40 minutes or until lightly brown. For eclaires, shape mixture into strips 1 inch wide and 4 inches long. Place 2 inches apart on greased cookie sheet. Cooking times and temperatures are the same as for puff shells.
