    Grandma used to fix this omelet for me almost every day when I stayed with her during the summer. This one you MUST try!

    List of Ingredients




    4 Slices Bacon, Cut In 1/2 Inch Pieces
    2 Tablespoons Water
    4 Tablespoons Butter
    1 Cup Diced Cooked Potatoes
    1/3 Cup Chopped Onion
    2 Tablespoons Chopped Parsley
    1/4 Teaspoon Salt
    2 Basic Omelets

    OMELET FILLING: In small skillet cook bacon until barely crisp. Drain bacon on paper towel and discard the drippings. In same skillet melt the butter, add potatoes and saute' over medium heat until golden, turning occasionally. Add bacon, onion, parsley, salt and pepper. Cook 3 to 5 minutes or until onion is soft. Cook omelets according to basic directions below then enjoy.

    BASIC OMELET: Beat 2 eggs, 2 tablespoons of water, pinch of salt and pinch of pepper until well blended but not frothy. Be sure you have a very hot pan. Sizzle 2 teaspoons of butter and swirl to coat pan. Add eggs, listen for 'sh-hoosh' sound. Point pans handle upward toward you, push cooked eggs to center. Tip and tilt to let runny parts flow underneath. While omelet top is still creamy, place filling on left side only. Fold over a flap. Gently shake pan until omelet edge slides onto plate then fearlessly flip pan over.
