    This dressing is for salads of fresh fish and mixed vegetables. You'll want to keep a good supply of this dressing on hand.

    List of Ingredients




    1 Lemon
    1/4 Teaspoon Dried Crumbled Thyme
    Pinch Of Sugar
    3 Peppercorns
    1/2 Cup Olive Oil
    1 Teaspoon Salt
    1/4 Teaspoon Curry Powder

    Recipe



    Grate the rind of the lemon into a small bowl. Extract the juice from the lemon and set it aside. Add the thyme and sugar to the grated rind and mix well. Crush the peppercorns in a mortar with a pestle until broken into coarse pieces. Blend these with the rest of the mixture. Place the reserved lemon juice, olive oil, salt and curry powder in a bottle. Cap the bottle and shake well. Add the mixture containing the thyme and shake again. This dressing will keep in a cool place for a month. If it becomes cloudy, bring it to room temperature and it will clear. Shake well each time before using. Makes about 3/4 cup
