    This dish has been around for many years and was primarily thought of as a southern dish. It's great for any meal.

    List of Ingredients




    2 Cups Blackeyed Peas, Washed And Drained
    1/2 Pound Sliced Bacon
    1 Onion, Minced
    1/4 Teaspoon Pepper
    2 Cups Rice
    1 Tablespoon Salt
    1 Small Hot Red Pepper

    Recipe



    Bring peas and 3 quarts water to boil; boil for 2 minutes. Cover pan and let stand for 1 hour. Cut up bacon and cook until browned; add onions and cook until golden. Pour bacon mixture into peas. Cover and simmer until peas are tender, about 1 hour. Stir in rice and seasonings. Cook, covered, without stirring, until rice is tender. Yields 8 to 10 servings.
