This is one of my favorites. I would rather have sweet potatoes any day and especially fixed like this.


List of Ingredients




4 Medium Or Large Fresh Sweet Potatoes
Sliced Bacon (Uncooked)
Sliced Fresh Pineapple
Brown Sugar
Butter
Cayenne Pepper
Salt
Parsley Or Celery Tops

Recipe



Cook sweet potatoes until nearly done. Since they are to be cooked longer in the oven they should not be too soft. Peel and cut in lengths to fit on top of a slice of pineapple. Wrap each sweet potato in two slices of bacon. Butter a dish well and lay slices of pineapple on the bottom. Sprinkle lightly with brown sugar and a little cayenne pepper. Lay a wrapped potato on top of each pineapple slice, salt a little and bake in a moderate oven until the bacon is crisp and the pineapple and potato are a light brown. Serve on a hot platter and garnish with parsley or celery tops.
