    Recipe Introduction


    My husband absolutely LOVES the Hashbrown Casserole from Cracker Barrel. I made this recipe up and he thinks it is actually better than the one served there. It can be made in the Crockpot or the oven. I usually make it in the crockpot so we can enjoy it even in the HOT summertime.


    List of Ingredients


    • 6 cups hashbrowns
    • Dried onion
    • 1 can cream of mushroom soup
    • 1/2 cup milk
    • 1 cup sour cream
    • 1/4 tsp thyme
    • Black Pepper to taste
    • Garlic to taste (about 1-2 cloves)
    • Cheese****


    Instructions


    1. Spray crockpot with cooking spray. Place hashbrowns in first. Add everything else to crockpot. Stir. Cook for 1 hour on high and turn down to low. Cook for 4 hours on high or 8 hours on low.
    2. To cook in the oven: Mix all ingredients together. Pour into greased, large baking dish. Cook in preheated 375 to 400 degree oven for 1 hour. Top with extra cheese, if desired.
    3. This recipe actually does turn out better in the crockpot because there is no loss of moisture like there is with oven cooking.


    Final Comments


    I use a variety of cheeses in quite a large amount. Probably a total of 1 to 1-1/2 lbs. of shredded cheese. I use mild and sharp cheddar, mozzerella, and the other shredded mixtures. The more cheese, the better. Experiment until you find a combination you like.
