    Recipe Introduction


    This is an easy soup to make. Very flavorful, too! Great for a quick meal!


    List of Ingredients


    • 1 can chili beans in sauce
    • 1 can kidney beans
    • 1 can Ro-tel tomatoes with chiles
    • 1 package taco seasoning
    • 1 package Ranch Dressing Mix
    • 1/2 to 3/4 pound ground chuck--browned
    • 1 small can corn (optional)
    • 1/4 pound Velveet cheese, cubed


    Instructions


    1. In pot, mix chili beans, kidney beans and Ro-tel (all undrained). Add in the beef, taco seasoning, Ranch dressing mix and drained corn. Cook on high until hot (or simmer for a few hours on med-low). Turn the heat down. Mix in the Velveeta and stir until cheese is melted. Serve with corn chips or tortilla chips.


    Final Comments


    I also serve this with a dollop of sour cream and salsa.
