    We are lucky enough to get a few huckleberries from our yard every summer. Any berry would work for this pie.

    Huckleberry Cream Pie

    1 single pie crust
    4 cups huckleberries
    1 1/4 cup sugar
    3 tablespoons flour
    1/8 teaspoon salt
    3 eggs -- beaten
    1/4 cup whipping cream -- (use 1/4 - 1/2 cup)

    Combine eggs, sugar, salt and flour. Stir in the huckleberries. Pour into unbaked pie shell. Slowly pour whipping cream over the top, being sure to cover the entire top.

    Bake at 375F for 10 minutes. Reduce heat to 350F anf bake a further 50 minutes, until filling is set.

    Serving Ideas : Serve warm or cold, with ice cream or whipped cream.

    NOTES : Any berry can be used for this, though you may want to reduce the sugar a little for sweeter berries.
