Italian Cream Cake

1 stick soft butter
1/2 cup shortening
2 cups sugar
5 eggs -- separated
2 cups flour
1 teaspoon baking soda
1 cup buttermilk
1 teaspoon vanilla
1 cup coconut
1 cup chopped pecans
Italian Cream Frosting
Beat egg whites until stiff.
Cream butter and shortening.
Add sugar and beat until smooth.
Add egg yolks one at a time, beating well after each addition.
Sift together flour and soda; add alternately with buttermilk.
Stir in coconut and nuts. Fold in beaten egg whites. Bake in preheated 350F oven for 25 to 30 minutes, until cake tests done. Cool in pan for a bit before turning out. Finish cooling on racks.
Frost with Italian Cream Frosting.
Italian Cream Frosting
1 pkg. cream cheese -- (8 oz), softened
1 stick butter -- softened
1 pound powdered sugar -- sifted
1 teaspoon vanilla
1/2 cup chopped pecans -- (1/2 - 1 c.)
chopped pecans and coconut
Cream together cheese and margarine. Add sugar and vanilla; beat until smooth; then spread between layers and on top of cake. Sprinkle nuts and coconut on top of cake.
