Jack-O-Lantern Fruit Treats

1 medium yam, cooked and mashed -- (to make 1/2 cup)
2/3 cup flour
1/4 cup packed brown sugar
1/2 tsp baking powder
1/4 tsp baking soda
1 1/2 tsp cinnamon
3/4 cup raisins
1 egg
2 tsp vegetable oil
raisins for decorating


Mix yam,egg and oil.Add to dry ingredients - mixture will be stiff. Drop dough, 2 tbs. at a time, onto lightly oiled cookie sheet. Flatten with fingertips to about 1/2". Make jack-o-lantern faces with raisins. Bake ~ 375F 15 minutes, or until very lightly browned. Makes 8 cookies
