Winter Pesto

Amount Measure Ingredient -- Preparation Method

1 teaspoon dried basil
1 cup fresh spinach
1 cup fresh parsley*
1/4 cup walnuts -- or pinenuts
1/4 cup olive oil
2 cloves garlic -- minced
1 cup parmesan cheese
salt and pepper -- to taste

Wash spinach and parsley; drain well and chop.


Blend all ingredients in food processor.

Can be frozen.

*I use 3/4 c. more spinach and just 1/4 c. parsley instead of the 1 c. parsley.
