    1 lb. ground beef
    1 can tomato soup
    1 envelope taco seasoning
    1 c. salsa
    ¼ c. water
    8 6” flour tortillas, cut into bite size pieces
    1 ½ c. Mexican blend shredded cheese

    Place ground beef in a large microwave-safe bowl. Cover and cook on high three minutes. Stir. Continue cooking covered on high for an additional three to five minutes, or until meat is no longer pink. Drain.

    Add soup, seasoning, salsa, water, tortillas and 1 c. cheese. Cover and cook on two to three minutes, or until heated through.

    Sprinkle with remaining cheese and let stand three to five minutes before serving.





    This recipe utilizes tortillas in an interesting way and spotlights how tortillas can be used in a variety of ways. Even if it is used as a more traditional taco shell, there are many different types of fillings that can be used. I use tortillas frequently in my kitchen. Many recipes that utilize tortillas are also quick and easy to make.
