    This recipe is so good.Marcy has made the for years and sometimes she will make them and bring to our family reunions.One brother usually requests them.

    List of Ingredients




    Filling:

    3 cups ricotta cheese
    1½ cups confectioners sugar
    2 tsp. vanilla extract
    ½ cup candied citron finely chopped
    1/4 cup semi sweet choc. pieces ( can use mini chips)

    Combine cheese, sugar and vanilla extract,beat about 10mins until smooth. add citron and choc.pieces.Place in refridgerator to chill while making the shells.

    Shells:

    3 cups flour
    1/4 cup sugar
    1 tsp. cinnamon
    1/4 tsp.salt
    3 TBS shortening
    2 eggs ,well beaten
    2TBS white vinegar,(or) 1 Tbs vinegar and 1TBS bourbon
    2 TBS Cold water.

    Sift together, flour, sugar cinnamon and salt,cut in shortening until like small peas..Next add the well beaten eggsAdd the water and vinegar, and turn out dough ontoa floured surface and knead.. Wrap in wax paper, chill in refrigerator fo 30 minutes.

    From cardboard, cut an oval6x4½ inches.roll chilled dough to 1/8 in. thick.on floured suraface.
    using pattern cut ovals from dough. Wrap dough around 6 in. tubes,lapping over the edges. seal edges by brushing with slightly beaten egg white.

    In deep fryer or saucepan heat oil or shortening, deep fry one at a time turnig occasionally until golden.(about 5 mins) Remove from hot oil, cool on papaer towels. When cool remove the tubes.and cool completely.After shells are cooled you may fill the shells,using a pastry bag and piping filling in the shell. Sprinkle with powdered sugar and sprinkle chopped pistacios on the ends.
    This recipe should make 16-18 cannoli
