    Recipe Introduction


    Julie's mother, Jan, says that her mother used to make this all the time. It's a family treasure and I can't wait to try it. Jan says that you can put ripe bananas into the freezer if you don't want to use them right away. They will still be good for this bread.


    List of Ingredients


    • 1 3/4 cups flour (all purpose)
    • 2 tsp baking powder
    • 1/4 tsp baking soda
    • 1/2 tsp salt
    • 2/3 cup sugar
    • 2 eggs
    • 1 cup mashed ripe bananas (2-3)
    • 1/4 cup fat, melted (Jan suggests vegetable oil)
    • 1/2 cup chopped nuts (optional)
    • raisins (optional)


    Instructions


    1. Sift the flour, baking powder, salt and sugar. Add the nuts.
    2. In a small bowl, add the unbreaten eggs, the mashed bananas and the fat which has been allowed to cool after melting. Stir these liquids quickly and lightly into the dry ingredients.

    3. Pour the batter into a loaf pan that has been greased and dusted with flour. Bake in a moderate oven (350 F) for about 1 hour. Cool before slicing.
