    Irish Soda Bread

    List of Ingredients


    • 4 cups all purpose flour (preferably unbleached)
    • 2 Tablespoons sugar
    • 2 teaspoons baking soda
    • 1 1/2 tsp salt
    • 1/4 cup butter room temperature softened
    • 1/2 cup white vinegar
    • 1 cup milk ( or 1 1/2 to 2 cups buttermilk instead of vinegar and milk)


    Instructions


    1. Mix the flour, soda, sugar and salt in a big bowl (so you can mix with your hands). Blend in the butter until it's the consistency of rice kernels.

    2. Mix the vinegar and milk in a jar and shake. (this will give the bread some softness).

    3. Add slowly to the dry mixture, mixing as you go until it is well blended. Turn out onto a floured surface and lightly knead for about 10 times and then shape it into a ball (or 2 for smaller loaves). Cut a cross into the top to allow the bread to "breathe".

    4. Bake at 375 for about 35 minutes or until the bread is split open on top with a good browning.
