    This was my first attempt at "elevating" West Virginia cuisine to a higher form. There is nothing better than good, country breakfast food so this seemed a good place to start. It makes a wonderful brunch and the taste is both rustic and refined. It would be welcome on any table in Southern Italy or in Southern West Virginia.


    List of Ingredients


    • 2 white potatoes, scrubbed with a wire brush and coarsely chopped -- some skin will remain
    • 2 red potatoes, scrubbed with a wire brush and coarsely chopped -- some skin will remain
    • 2 cippolini onions, coarsely chopped
    • 1 clove garlic, minced
    • 1 oz pancetta (you can substitute a fine, thick local bacon), finely chopped
    • salt and pepper to taste
    • olive oil
    • 4 farm fresh eggs


    Instructions


    1. Toss together potatoes, onions, garlic, pancetta, olive oil and salt and pepper. Add to hot skillet and start frying potatoes to a golden brown. While browing, start the eggs. Plate while the eggs are poaching.
    2. Perfectly poach the 4 eggs and time them to finish as all the potatoes are plated. Top each plate with 1 poached egg.
    3. Serve immediately.


    Final Comments


    Serves 4.
