    Aunt Easter's Chicken-Rice Casserole

    List of Ingredients


    • 1/2 cup margarine or butter
    • 3/4 tsp salt
    • 1/3 cup flour
    • 1/8 tsp pepper
    • 1 1/2 cup milk
    • 2 cups cut-up cooked chicken
    • 1 1/2 cups cooked white or wild rice
    • 1 cup chicken broth
    • 1/3 cup chopped green bell pepper
    • 1/4 cup slivered almonds
    • 1 T chopped pimento
    • 1 can (4 oz) mushroom stems and pieces, drained


    Instructions


    1. Heat oven to 350. Heat margarine in a 2 quart saucepan. Stir in flour, salt and pepper. Cook over medium heat until smooth and bubbly, stirring constantly. Boil and stir 1 minute.
    2. Stir in remaining ingredients and pour into an ungreased 2 quart casserole dish. Bake uncovered 45 minutes or until bubbly.
