    Recipe Introduction


    This is another attempt at using local produce to improve a classic recipe. My husband prefers it to regular Boston Baked Beans


    List of Ingredients


    • 2 cups yellow eyed beans
    • 1 yellow onion, chopped
    • 1/2 lb local bacon (I use Sandy Hill Farms bacon) chopped
    • 6 Tablespoons local sorghum
    • 1 tsp dry mustard
    • 1 tsp salt
    • 1/4 tsp pepper (or to taste)


    Instructions


    1. Soak beans for 1-2 hours. Drain and simmer in water for 20 minutes. Drain again.
    2. Place 1/3 of beans in a dutch oven. Add 1/3 of onions and 1/3 of bacon. Repeat until everything is used up.
    3. Mix remainder of ingredients with at least 1 cup hot water and cover oven.
    4. Bake in a 300 degree oven for 4 hours (more if oven is slow). Occasionally check water levels so beans don't dry out. Stir once or twice during the 4 hours.
