    Nancie's Lace Cookies

    Source of Recipe

    Nancie Bannister

    List of Ingredients

    • 1 C quaker oats - 1 minute type
    • 1 C sugar
    • 2 T flour
    • 1/4 t salt
    • 1/2 C unsalted butter, melted
    • 1 egg, lightly beaten
    • 1/2 tsp vanilla
    • 2 T nuts (optional) chopped

    Instructions

    1. Preheat oven to 350.

    2. Beat egg. Add everything except butter. STIR. Add butter and stir. Before starting to mix the ingredients, prepare your cookie sheets with aluminum wrap and grease them the first time only. Drop with 1/4 to 1/2 teaspoon of mixture for each cookie. These cookies spread - do not get them too close together. Cook at 350 degrees. WATCH THEM CLOSELY! When brown on the edges transfer to a higher shelf. When finished baking, slide aluminum wrap off of pan immediately. Let cool a few seconds. Remove with a thin spatula. This should make about 120 or more cookies.

    Final Comments

These can be frozen I am told, but they've never lasted long enough to try it.
