    Uncle Dave's Famous Pasta Sauce

    Thanks to my wonderful brother-in-law...no more canned sauces. If you make this in the same house as my mother, keep an eye on it...she will eat all the pork chops while you aren't looking.

    List of Ingredients

    2 or 3 pork chops still on the bone
    1 28 oz can diced tomatoes
    1 28 oz can crused or pureed tomatoes
    2 6 oz cans tomato paste
    1 lg. spanish, yellow or vidalia onion.
    minced garlic to taste (I recommend 1/2 head)
    2 T olive oil
    oregano
    basil
    salt & pepper

    Recipe

    Chop the onion and mince the garlic. Brown the garlic, onion and pork chops in olive oil (use a large pot or dutch oven). When onion starts to turn translucent add tomato products and pour in about 50 oz water. Add tomato paste and season to taste. It will taste a little bland...give it time to develop in taste before final seasoning at the end.

    Bring to a boil then reduce temperature and simmer uncovered about 3 hours. Use a splatter guard. Stir every 30 minutes and scrape sides. Taste in 2 hours and adjust seasonings.

    The pork chops will be very tender and will fall off the bones. Pick out bones and serve with LOTS of pasta.
