    Recipe Introduction


    The flavor here dpends on good-quality cheese, so splurge, you are worth it.


    List of Ingredients


    • 2 (14 oz) cans chicken broth
    • 1/2 C water
    • 2 lbs. boneless chicken breast cut into bite-sized chunks
    • 1 lb orzo
    • 8 oz frozen peas, thawed
    • 3/4 C plus 1/4 C freshly grated Asiago cheese
    • 1/2 t salt
    • 1/4 t fresh oregano, minced
    • 1/8 t cracked black pepper


    Instructions


    1. Bring the broth nd water to a boil in a heavy pot over high heat. Add chicken and orzo. Reduce heat to medium low and simmer until most of the liquid is gone.
    2. Add peas, 3/4 C cheese, salt, oregano and pepper. Mix well and cook for 5 more minutes or until heated through.
    3. Sprinkle with the remaining cheese before serving.
