    This is a great way to serve fresh peas, whenever you can get them.

    List of Ingredients




    1/4 C real butter
    4 thin slices of Virginia Smithfield Ham (salt cured ham), minced
    The leaves of 6 parsley sprigs, chopped finely
    2 green onions chopped
    2 lbs fresh peas in the pod

    Recipe



    Melt butter in a skillet. Add ham, parsley, onions and salt and pepper to taste. Heat through. Hull peas, wash and put in a small pan. Add enough boiling salted water to cover. Wash about half of the pods and add to the pan. It will make it taste better. Cook for 15-20 minutes or until tender. Drain and discard the pods. Add the peas to the ham and butter mixture. Cook gently for about 5 minutes and serve. You can use frozen peas, but it just isn't as good. Serves 4.
