    Vicki's Shrimp

    Source of Recipe

    Vicki Keck

    Recipe Introduction

This is a great recipe I got from Vicki one time when we were on vacation in Orange Beach, she fixed it for us and now when one of my kid's birthday rolls around and I ask them what they want, it's usually steak and Vicki's shrimp. I have done mine out on the grill, but Vicki did hers in the oven and they are great both ways.

This recipe has two parts, one for the marinade and one for the dipping butter.

    List of Ingredients

    Marinade

    3/4 cup vegetable oil
    1 medium onion
    2 Teaspoonsful Cajun seasoning
6 cloves Garlic (I use the already minced kind you have to keep in the refrigerator)
    2 teaspoonsful ground Cumin
    1 teaspoon minced fresh Rosemary
    1 teaspoon minced fresh Thyme
    2 lbs shrimp

    Dipping Butter Ingredients

    2 sticks butter
    1 teaspoon minced fresh Basil
    1 teaspoon minced fresh Tarragon
    1 teaspoon Cajun seasonsing
    1/2 teaspoon Garlic powder
    3 drops hot pepper sauce

Mix all ingredients and serve with shrimp!

    Recipe

Mix all the MARINADE ingredients together (I like to mix mine in a food processor). Add shrimp to a gallon zip lock bag and pour marinade in bag, coat shrimp well, then refrigerate for 1-2 hours (shaking it every now and then to be sure to coat evenly). You can pour some of remaining marinade over shrimp once its on the grill. Grill shrimp low on skewers or in a grill basket pan for about 5 minutes or so or until done. Serve with the dipping butter.
