    eye round roast
    3 garlic cloves -- slivered
    salt and pepper -- to taste

    Preheat oven to 500 degrees.

    Cut deep slits all over roast with a sharp knife. Insert garlic slivers until they disappear into roast. Cover roast with salt and pepper. Place roast fat side up in a roasting pan.

    Roast meat 6-7 minutes per pound then turn off oven. DO NOT OPEN OVEN DOOR!! Leave roast in hot oven for 1 hour.

    After an hour remove roast to carving board and let rest 10 minutes under tented foil.
