    Mama Pacettie's Spaghetti with Meatballs and Sausage

    Amount Measure Ingredient -- Preparation Method

    Meatballs:
    1 pound ground chuck
    1 onion -- minced
    2 cloves garlic -- minced
    1/4 cup fresh chopped parsley
    1/4 cup parmesan cheese -- grated
    1/2 cup fine dry breadcrumbs
    1 egg -- beaten
    1 teaspoon salt
    1/2 teaspoon pepper
    1 teaspoon Italian seasoning
    1/4 teaspoon oregano
    2 tablespoons olive oil
    Sauce:
    2 onions -- chopped
    3 cloves garlic -- minced
    3 tablespoons olive oil
    2 pork chops
    1 pound mild italian sausage -- cut in 2-inch pieces
    2 28 oz cans chopped tomatoes
    1 tablespoon fresh basil -- chopped
    1/4 cup fresh parsley -- chopped
    1/2 teaspoon thyme -- crumbled
    1 teaspoon salt
    1/4 teaspoon pepper
    1 teaspoon sugar
    1/4 teaspoon red pepper flakes -- crushed
    6 ounces tomato paste
    2 8 oz cans tomato sauce
    1/4 teaspoon oregano
    1/4 teaspoon marjoram
    1/4 teaspoon rosemary
    1 bay leaf
    1 teaspoon Italian seasoning
    12 ounces spaghetti -- cooked
    freshly grated parmesan cheese

    Mix meatball ingredients and brown in olive oil.

    Brown sausage and set aside. Saute onions, chops, and garlic in a large pot. Add tomatoes, paste and sauce, bring to a boil. Add next 13 ingredients, sausage, meatballs, and simmer uncovered for 2 hours, stir occasionally. Top with cheese when serving.
