Artichoke Bites

Recipe Introduction
These freeze very well. Do it before the broiling part. I also intend to try the topping on baguette slices.
List of Ingredients
- 6 T. butter - room temperature
- 4 cloves garlic - minced
- 8 english muffins - split
- 8 oz. crumbled feta
- 6 thinly sliced green onions
- 1 chopped and seeded tomato
- 1 t. oregano
- 1 small jar of marinated artichoke hearts - drained and chopped, marinade reserved
- 1/4 c. grated Parmesan cheese (not pre-grated)
Instructions
- Mix butter and garlic. Toast muffin halves under broiler until very light brown. When muffins are cool, spread with garlic butter.
- Fold together feta, green onions, tomato, oregano and artichokes. Add 1 T. of reserved marinade, or more if mixture is dry. Add Parmesan cheese. Top each muffin with artichoke mixture.
- Broil until golden. Let cool slightly. Slice into quarters before serving.
