    Cheese Straws

    List of Ingredients


    • 2 lb. very good, very sharp cheddar cheese - grated and room temperature
    • 1/2 lb. butter - room temperature
    • 4 c. all purpose flour
    • 4 t. baking powder
    • 1/2 t. salt
    • 1 t. cayenne pepper


    Instructions


    1. Blend butter and cheese very well.

    2. Sift flour, then sift again with the baking powder, salt and cayenne pepper.

    3. Blend flour mixture into the cheese/butter mixture completely. Blend until smooth and very stiff.

    4. At this point you have a choice: you can either use a cooky press to form the dough into long thin straws or you can divide the dough into 4 or 5 cucumber shaped rolls, wrap each separately in wax paper, and refrigerate for easier handling. If you choose the latter method, you will need to slice each roll into thin rounds.

    5. Preheat the oven to 300 degrees and bake on cooky sheets for 20 minutes or until a delicate golden brown. Cool on cooky racks and store in tightly covered tins between layers of wax paper.



    Final Comments


    These freeze very well. You can freeze after cooking, or you can freeze the raw dough.

    If you like, you can press a pecan half into each 'cooky' before baking.
