    Unusual, but easy and good.


    List of Ingredients


    • 1 - 16 oz. loaf good white bread
    • 4 oz. bleu cheese, softened
    • 2 T. butter, softened
    • 2 T. finely chopped fresh basil leaves


    Instructions


    1. Trim crusts from 16 slices of bread. On cutting board, with rolling pin, roll each slice of bread paper-thin.
    2. Remove rind, if any from bleu cheese. Evenly spread about 2 t. over 1 slice of bread; top with second slice of bread, pressing gently to make 1 sandwich. Repeat with remaining bread and cheese to make 8 sandwiches in all.
    3. Preheat oven to 400 degrees. Melt butter. Stir in chopped basil. Brush both sides of each sandwich with the butter mixture.
    4. Cut each sandwich diagonally into quarters; cut each quarter into two triangles to make 8 triangles from each sandwich.
    5. Arrange triangles in 1 layer on parchment lined cooky sheet. Bake 12 minutes or until golden. Serve hot or cool.
