Recipe Introduction
Unusual, but easy and good.
List of Ingredients
- 1 - 16 oz. loaf good white bread
- 4 oz. bleu cheese, softened
- 2 T. butter, softened
- 2 T. finely chopped fresh basil leaves
Instructions
- Trim crusts from 16 slices of bread. On cutting board, with rolling pin, roll each slice of bread paper-thin.
- Remove rind, if any from bleu cheese. Evenly spread about 2 t. over 1 slice of bread; top with second slice of bread, pressing gently to make 1 sandwich. Repeat with remaining bread and cheese to make 8 sandwiches in all.
- Preheat oven to 400 degrees. Melt butter. Stir in chopped basil. Brush both sides of each sandwich with the butter mixture.
- Cut each sandwich diagonally into quarters; cut each quarter into two triangles to make 8 triangles from each sandwich.
- Arrange triangles in 1 layer on parchment lined cooky sheet. Bake 12 minutes or until golden. Serve hot or cool.
