Recipe Introduction
I did these for New Year's Eve 2010 at the Mac's and they were VERY popular. They are kind of like cheese biscuit's with pepperoni. The only changes I made were to add garlic and instead of 'pizza seasoning' (I was really sure what she meant by that), I used Penzey's Tuscan herb blend. I made them that morning and just reheated before serving. Really good!
List of Ingredients
3/4 cup flour
3/4 teaspoon baking powder
3/4 cup milk
1 egg
1 1/4 cup Italian Cheese blend
4 ounces Pepperoni Mini’s (or regularly-sized pepperoni, chopped)
1 tsp pizza seasoning, optional.
1 cup your favorite marinara
2 Tablespoons fresh basil, thyme, or italian parsley, chopped
Recipe
Saute the pepperoni until lightly browned, then chop into small pieces.
Lightly spray a mini muffin pan.
In a large bowl, combine all ingredients together, stirring until completely mixed. Spoon into the prepared mini-muffin cups. Bake in an oven preheated to 400 degrees for 15-20 minutes. Sprinkle with fresh chopped herbs, and serve with warm marinara for dipping
Makes about 18.
