    Mary's Roast Beef Appetizers

    Recipe Introduction


    These are delicious little appetizers. They make ahead well and are easy, but impressive.


    List of Ingredients


    • 1 long French baguette - 1/2" slices
    • 2 T. olive oil
    • garlic clove, sliced
    • 1/2 c. mayo
    • 5 T. capers
    • 3 T. sliced chives
    • 1/4 c. fresh grated parmesan cheese
    • 1/4 t. garlic powder
    • deli roast beef
    • plum tomatoes, slice thin and drained on paper towels
    • more sliced chives for garnish


    Instructions


    1. Gently saute the sliced garlic in olive oil. Brush the sliced bread w/ the oil and toast it in a 300 degree oven until browned.
    2. Mix the mayo, capers, chives, parmesan and garlic powder. Spread over the toasts. Top with a folded slice of beef, a tomato slice and some chives.
