Mary's Roast Beef Appetizers

These are delicious little appetizers. They make ahead well and are easy, but impressive.
List of Ingredients
- 1 long French baguette - 1/2" slices
- 2 T. olive oil
- garlic clove, sliced
- 1/2 c. mayo
- 5 T. capers
- 3 T. sliced chives
- 1/4 c. fresh grated parmesan cheese
- 1/4 t. garlic powder
- deli roast beef
- plum tomatoes, slice thin and drained on paper towels
- more sliced chives for garnish
Instructions
- Gently saute the sliced garlic in olive oil. Brush the sliced bread w/ the oil and toast it in a 300 degree oven until browned.
- Mix the mayo, capers, chives, parmesan and garlic powder. Spread over the toasts. Top with a folded slice of beef, a tomato slice and some chives.
