    Raspberry-Brie Tarts

    My mother-in-law Judy.

    Recipe Introduction

    My mother-in-law Judy made these for our anniversary party. Wonderfully easy and delicious – you could certainly change around the kind of preserves and cheese to vary the flavor. I think that bleu or cabrales and fig preserves would be fantastic.

    List of Ingredients

    2 (2.1 oz.) packages of frozen mini filo pastry shells (30 shells)
    1 (8 oz.) round Brie cheese
    3 T. raspberry spreadable fruit

    Recipe

    Heat oven to 350 degrees. Place pasty shells on ungreased cooky sheet. Cut cheese into 1/2 inch cubes. Place 3 cheese cubes into each filo shell. Bake for 10 – 12 minutes or until cheese is melted and bubbly.

    Remove partially baked shells from oven. Spoon 1/2 t. spreadable fruit over cheese in each shell.

    Return to oven; bake an additional 2 – 3 minutes or until spreadable fruit is melted. Serve warm.

    Makes 30 appetizers.
