Southwest Zesty Margarita Shrimp

Recipe Introduction
My mother-in-law Judy made this for our anniversary party. These were just delicious. Note that you have to start them ahead of time and marinate them. UPDATE: I made these for New Year's Eve 2009 and tried Ina Garten's method of roasting the shrimp rather than broiling them. After marinating, you just preheat the oven to 400 degrees and spread them in a pan and roast for 8-10 minutes, just until they turn pink and are done. They are easier to do (no turning) and come out very moist.
List of Ingredients
1/4 c. finely chopped green onions
1/4 c. oil
1/4 c. tequila
1 t. grated lime peel
2 T. honey
2 T. chopped fresh cilantro
1/2 t. salt
1 lb. large tiger shrimp, shelled, tails left on and deveined
Recipe
In medium bowl, combine all ingredients except shrimp; mix well. Add shrimp, stir to coat. Cover, refrigerate at least 4 hours or up to 8 hours to marinate.
Spray broiler pan with nonstick cooking spray. Drain shrimp, discarding marinade. Place shrimp on sprayed broiler pan. Broil 4 inches from heat for 5 to 7 minutes or until shrimp turn pink, turning once.
Serves 8 – 10 as an appetizer.
