    My MIL, Jo, made these for her Christmas buffet. They were really good and she said they were very easy to make. I think that you could make them ahead of time and reheat when you wanted to serve them. I would like to try them with roasted red peppers instead of raw ones.

    List of Ingredients




    24 won ton wrappers
    1 can (14 oz.) artichoke hearts, drained, finely chopped
    1 cup shredded Mozzarella Cheese
    1 pkg. (10 oz.) frozen chopped spinach, thawed, squeezed dry
    1/3 cup olive oil reduced fat mayonnaise
    1/3 cup grated Parmesan cheese
    1/4 cup finely chopped red peppers
    2 cloves garlic, minced

    Recipe



    Preheat oven to 350°F.

    Spray a 24 cup mini muffin tin with cooking spray. Put a won ton wrapper in each of the cups, extending the edges of the wrappers over the top of the cups. Bake for 5 minutes.

    Combine remaining ingredients. Spoon the mixture into the won ton cups and bake 12 - 14 minutes, until the filling is heated and the cups are golden brown.

    Makes 24 mini appetizers.
