Chicken Satay

List of Ingredients
- 1 ¼ lb. boneless, skinless chicken breast, cut into 2” pieces
- Peanut marinade, see recipe
- 12 green onions
Instructions
- Marinate chicken in sauce for 3 hours in the refrigerator. Remove from the refrigerator 30 minutes prior to cooking.
- Drain chicken, reserving marinade. Bring marinade to a boil and boil for 1 minute.
- Soak wooden skewers in water for 15 minutes.
- Trim onions. Put chicken on skewers, leaving about 4” on either end of skewer bare. Put onions on either end of skewers. Grill or broil 10 – 15 minutes until done, occasionally brushing with boiled marinade.
