    Chicken Satay

    List of Ingredients


    • 1 ¼ lb. boneless, skinless chicken breast, cut into 2” pieces
    • Peanut marinade, see recipe
    • 12 green onions


    Instructions


    1. Marinate chicken in sauce for 3 hours in the refrigerator. Remove from the refrigerator 30 minutes prior to cooking.

    2. Drain chicken, reserving marinade. Bring marinade to a boil and boil for 1 minute.

    3. Soak wooden skewers in water for 15 minutes.

    4. Trim onions. Put chicken on skewers, leaving about 4” on either end of skewer bare. Put onions on either end of skewers. Grill or broil 10 – 15 minutes until done, occasionally brushing with boiled marinade.
