    A co worker of my Mother in Law

    List of Ingredients


    • 1/8 c. oil
    • 1 clove garlic - minced
    • 1/2 onion - minced
    • 1/4 cabbage - shredded
    • 1 carrot - julliened
    • 1 stalk celery - thinly sliced
    • handful of snowpeas - trimmed
    • 1 c. cooked pork, beef, chicken, beef or shrimp
    • 3/4 c. chicken broth
    • 1/2 pkg. rice stick noodles or bihon - soaked and drained according to package directions
    • salt and pepper
    • 1 T. soy sauce
    • 2 T. sliced green onions
    • 1 sliced hard boiled egg
    • 1 lemon cut in wedges


    Instructions


    1. Heat oil in wok or large skillet. Saute vegetables until tender/crisp. Add meat and stir fry until hot.

    2. Add soy. Cook 2 minutes.

    3. Add broth. Mix in the soaked and drained noodles.

    4. Salt and pepper to taste.

    5. Garnish with green onion, eggs and lemon wedges.



    Final Comments


    Pass with additional soy sauce and hot sauce.

    Serves 6-8
