This is more a method than a recipe. You can cook any steak like this, but we tried a dry aged rib eye from Whole Foods last night and it was the best steak I have ever made. Incredibly tender and so full of flavor. I served this with Skip's Gorgonzola sauce and it was truly amazing.

2-inch bone on dry aged ribeye
Kosher salt
Freshly ground black pepper
Vegetable oil
Recipe
Preheat the oven to 400 degrees (do this for about 1/2 hour).
Let the steak come to room temperature, coat with the salt and pepper. Sear it quickly on all sides in a cast iron skillet (with a thick steak, you will have to hold it up with tongs to sear the edges). Put the skillet in the oven and roast until the interior temperature reaches about 5 degrees below where you want to serve it: 115 for rare, 125 for medium-rare and 135 for medium and no one needs to know about well-done - you don't buy dry aged steaks and then cook them well-done!
Let the steak sit for about 10 minutes before cutting into it.
You can put some flavored or plain butter on top when you serve them.
