    Short Ribs w/ Carmelized Onion & Hoisin

    List of Ingredients


    • 1-½ lb. short ribs
    • 1 qt. tomato puree
    • 1 c. balsamic vinegar
    • ½ c. sherry vinegar
    • 1 c. hoi sin sauce
    • ¼ c. soy sauce
    • 1 T. chipotle Tabasco
    • 1 T. chopped shallots
    • 1 T. extra virgin olive oil
    • Ground white and black peppercorns
    • 4 oz. caramelized pearl onions
    • 2 oz. brown sugar


    Instructions


    1. Preheat oven to 300 degrees.

    2. Sear short ribs on both sides in olive oil.

    3. Place into roasting pan.

    4. Mix rest of ingredients and pour over meat. Roast for 4 – 6 hours or until fork tender.



    Final Comments


    Serves 4.
    Since this is essentially a glorified pot roast, I think that you could cook this on top of the stove at a very low heat, or even in a crock pot. Mine was falling apart tender at 4 hours. I served this with stir fried noodles and peas (snow peas would be good, too).
