Short Ribs w/ Carmelized Onion & Hoisin

List of Ingredients
- 1-½ lb. short ribs
- 1 qt. tomato puree
- 1 c. balsamic vinegar
- ½ c. sherry vinegar
- 1 c. hoi sin sauce
- ¼ c. soy sauce
- 1 T. chipotle Tabasco
- 1 T. chopped shallots
- 1 T. extra virgin olive oil
- Ground white and black peppercorns
- 4 oz. caramelized pearl onions
- 2 oz. brown sugar
Instructions
- Preheat oven to 300 degrees.
- Sear short ribs on both sides in olive oil.
- Place into roasting pan.
- Mix rest of ingredients and pour over meat. Roast for 4 – 6 hours or until fork tender.
Final Comments
Serves 4.
Since this is essentially a glorified pot roast, I think that you could cook this on top of the stove at a very low heat, or even in a crock pot. Mine was falling apart tender at 4 hours. I served this with stir fried noodles and peas (snow peas would be good, too).
