    Recipe Introduction


    I had a VERY small prime rib roast (2.5 lb.) and was unsure of the best way to cook it. Marlene suggested that I basically treat it like a very thick steak. It worked perfectly!

    List of Ingredients




    Small roast
    S&P, or Montreal Steak Seasoning
    Vegetable oil

    Recipe



    Bring the roast to room temperature and rub with seasoning.

    Preheat the oven to 325 degrees convection.

    Sear it on all sides in oil in a heavy skillet. Place on a rack and roast until the temperature reaches desired doneness (125 for rare, 130 for medium rare). This will take anywhere from 30-50 minutes, probably. Testing the temperature of the meat is a better judge than time, though.

    Let rest 10 minutes before carving.
