    Stuffed Flank Steak

    List of Ingredients


    • 10 (approx.) good sized spinach leaves
    • 1 1/2 lb. flank steak
    • 4 thin slices of Swiss cheese
    • 2 sweet Italian sausages
    • 3 T. olive oil
    • 1 large onion - thinly sliced
    • 8 garlic cloves - crushed
    • 1 c. dry red wine
    • 1/2 c. beef stock
    • 1/4 c. red wine vinegar
    • 2 bay leaves
    • 2 chopped basil leaves


    Instructions


    1. Preheat oven to 350 degrees.

    2. Cover meat with spinach and cheese and lay sausage down on the edge of the meat lengthwise. Roll up from the sausage edge and tie. Add salt and pepper. Brown in olive oil. Remove from pan and place in a casserole.

    3. Add onions to oil and saute, covered, on low for about 15 minutes. Add garlic and saute one minute. Add rest of ingredients. Bring to a boil. Pour over meat roll. Cover and bake one hour.



    Final Comments


    Serve with pasta, a big salad and garlic bread.
