Jessica loved this bread. Really good and garlic-y! I’d never tried the method of cooking the garlic/herb mixture ahead of time and really liked the results. I just used a crusty loaf of bread. I also used 1/4 cup of olive oil – I thought that 1/2 cup would be too much – the 1/4 cup worked fine.
6 large garlic cloves, chopped
1/4 cup chopped flat-leaf parsley
1/4 cup chopped fresh oregano leaves
1/2 teaspoon kosher salt
Freshly ground black pepper
1/2 cup good olive oil
1 loaf ciabatta bread, sliced in half horizontally
2 tablespoons unsalted butter
Recipe
Heat the oven to 350 degrees. Mince the garlic and herbs fine and mix together with the salt and pepper (you can also do this in a mini food processor). Heat the oil in a small sauté pan and add the garlic/herb mixture. Sauté for a couple of minutes – do not brown the garlic.
Spread the garlic/oil mixture on one half of the bread and the butter on the other half. Put the halves back together and wrap in foil. Bake for 5-10 minutes, open the foil and bake for an additional 5-10 minutes. If you like it toasted [we do], lay the bread out flat with cut sides facing up and broil for a couple of minutes.
