    Biscuits & Gravy w/ Sausage & Egg Cass.

    This is a seriously White Trashy casserole and absolutely delicious! She mentions that if you really like gravy, you might want to make a second batch. We decided that it might be a good idea to do that. The casserole could use just a little more to make sure that the egg layer is sealed in (where the egg was coming through, it got a little tough) and then have extra for leftovers. According to the author (I haven’t tried this yet) you can also put this together the night before. If you do that, you’ll need to add about 20 minutes to the cooking time. Tent with foil if you find that the top is getting too browned.

    List of Ingredients

    8 count package of biscuit dough (we used Grands, which are slightly bigger)
    6 eggs
    2 (2 3/4 ounce) packages peppered gravy mix (each packet makes 2 cups) – see note above
    1 lb sausage, any flavor
    1 cup cheese, shredded
    1/2 cup milk
    salt and pepper to taste

    Recipe

    Heat the oven to 350F. Spray a 13x9-inch baking pan with oil spray.

    Cook and break up the sausage in a skillet and drain well.

    Cut the biscuit dough into 1-inch pieces (cut each circle in half, then each half in thirds) and place in the bottom of the pan.

    Scatter the sausage over the dough, then add the cheese.

    Whisk together the eggs, milk, salt, and pepper and pour over the cheese.

    Make the gravy (according to the package directions) and pour over the eggs, covering completely.

    Bake for about 35 minutes. Put a knife through the casserole and peek at the biscuit layer to see if it is cooked. Remove from the oven and let sit for 10 minutes before serving.

    Serves 6-8.
