    Stephanie made these for our 2022 visit. Absolutely delicious and really easy. You can get things ready the night before and just put them together in the morning. The recipe calls for Cheddar cheese and bacon, but you could use almost any cheese (Stephanie used Gruyere and that was excellent) and any breakfast meat. We thought a good ham would be great. Stephanie used a little of Penzey’s Sunny Paris seasoning and left the green onion out. The original poster says you can toast the tops along with the “boats” (for a shorter amount of time, of course) and place them on top for added crunch.

    List of Ingredients




    4 large croissants
    5 eggs
    7 tablespoons cheddar cheese, grated
    6 strips bacon, chopped (or ham or sausage)
    3 tablespoons green onion OR 1 1/2 - 2 tsp. Penzey’s Sunny Paris
    2 tablespoons milk

    Recipe



    Heat oven to 375F and line a baking sheet with parchment.

    Slice the top off each croissant – probably 1/4 of the way down (go to the webpage and look at the picture if you need to).

    In a bowl, beat together the eggs and milk. When fully combined add the cheese, bacon, and green onion (see my note above).

    Place the croissants on the baking sheet and spoon the egg mixture into them.

    Bake for 25 minutes. The eggs should be set and the croissants golden brown.

    Serves 4.
