Coconut Sour-Cherry Granola

Delicious granola and not as sweet as some. I probably doubled the amount of cherries and pepitas.

2 3/4 cups rolled oats
1 cup shelled pistachios
1/3 cup raw pepitas
1 cup unsweetened coconut chips or flakes (not shredded coconut)
1 tablespoon salt
1/2 cup light brown sugar
1/3 cup extra virgin olive oil
1/3 cup maple syrup, perferably Grade B
3/4 cup dried sour cherries
Recipe
Heat oven to 300F. Line 2 half sheet pans with parchment paper.
Mix together the oats, pistachios, pepitas, coconut, and salt [I couldn’t find shelled pistachios without salt, so I omitted it at this step] and a good-sized bowl.
Mix together the brown sugar, olive oil and maple syrup in a small saucepan. Stir over medium heat until the sugar dissolves and pour over the oat mixture. Toss well to evenly coat the oats with the sugar mixture.
Spread the oats evenly in the baking sheets. Bake for 30-40 minutes, stirring occasionally. The mixture should be dry and lightly browned. Remove from the oven, dump into a large bowl and mix in the cherries. Spread out onto the two baking sheets and cool completely before storing. You can keep this for a week, sealed or for a month in the freezer.
Makes about 7 cups.
