We liked this a lot. I’m not sure it’s much easier or better tasting than making a quiche with a prepared pie crust, but it WAS good. You can, I’m sure, substitute sausage or ham for the bacon, other cheeses for the Swiss, and add whatever vegetables you like. Anna notes that she had to cook hers about 55 minutes for it to get done. Mine was completely done at 35, as instructed in the original recipe. I DID cook mine in the CSO, which may account for that. I noticed that the top was a little browner than I really prefer – I may cook it in the regular oven next time.
List of Ingredients
12 slices of bacon, crisply fried and crumbled
1c shredded Swiss cheese
1/3c chopped onion [I sauteed mine]
2c milk
1c Bisquick baking mix
4 eggs
1/4tsp salt
1/8 t. pepper
Recipe
Heat oven to 400. Spray a 10-inch pie plate. Spread bacon, cheese, and onion in the bottom of the dish and set aside.
In a bowl, mix the milk, Bisquick, eggs, salt, and pepper until well combined – about 1 minute with a hand mixer. Pour this mixture over the bacon and cheese. Bake 35 to 40 minutes – it should pass the knife test. , or until knife inserted into center of pie comes out clean. *I had to add extra baking time to this and forgot to mention it in the video. I ended up baking it for about 55 minutes.
