This recipe makes lovely, fragrant French toast. It is especially nice with a loaf similar to panettone. And if you use a round loaf (same size as a panettone), it uses up all the custard!
4 large eggs
3/4 cup Orange Juice
1/2 cup milk
1/2 tsp. cinnamon (I used Brian’s cinnamon/citrus blend)
12 slices of your favorite toast/bread
2 tbsp. butter – or ghee (melted works best)
1 T. honey
Cinnamon sugar, optional
Recipe
Heat oven to 250F. Heat a griddle or frying pan (electric is good) to 350F. Put a baking sheet with a rack in the oven. And put another rack over another sheet pan to let the soaked bread drip for a bit before griddling.
Whisk together the eggs, OJ, milk, cinnamon, and honey in a flat pan (a 7x11-inch pan is great for this). Place each piece of bread into the custard and let sit for about 30 seconds. Flip over and let sit for another 30 seconds. Place on the rack in the 2nd baking sheet for a couple of minutes. Butter the griddle and place bread onto griddle. Cook until each side has good color. I like to sprinkle each side with cinnamon sugar while cooking. When done, transfer to the rack in the warm oven. Repeat with the rest of the slices of bread.
