    Overnight Oatmeal

    Recipe Introduction

    This recipe is for those who prefer the steel cut oats, but don't have the time to devote to them on busy mornings. Mike likes this a lot and it is so easy to do. I just get it set up the night before and he heats it the next morning. Add ins can include fresh or dried fruit, maple syrup, brown sugar, jam, cream, etc.

    List of Ingredients

    1 1/2 c. water
    pinch of salt
    1/2 c. steel cut oats

    Recipe

    Lightly toast the oats in the saucepan (you can skip this step, if you like - it just adds a little extra flavor). Remove them from the pan and add the water and salt. Bring to a boil. Slowly add the oats to the water, stir well, remove from heat and cover. Set aside overnight.

    The next morning reheat the oatmeal over medium-low heat until it is just bubbling. Put in any add ins you like.

    NOTE: This amount of water makes thick like Mike likes it, but you can use 2 cups of water if you like your oatmeal thinner.

    This makes a generous amount for one person or 2 small (kid size) servings.
